I just made your soup and it was AWESOME!! I have wanted to make potato soup for a long time but was too afraid…your ingredients were so simple, so I tried it! PERFECT! My entire family love it!! Thanks for sharing!

Jill- so happy you decided to try it! I’m the same way, sometimes I look at a recipe with so few ingredients and so easy, I think, “this can’t be that good!”, but it surprises me in the end!
I swap bouillon cubes with chicken broth back and forth all the time, depending on what I have in my pantry!

this soup looks almost too easy to be good, but it’s -3 degrees in vail, co today and i thought i’d give it a try. wow! sometimes the simplest things are the best. thanks.
(ps – i didn’t have bouillon, so i just covered the potatoes with 1/2 water and 1/2 chicken stock).
